Kevin Stuart, owner of Stillhouse Wine Room moved here from Florida a couple of years ago planning on continuing his career as a sculptor and software engineer. But when he got to Killeen he realized there was no wine bar and that’s what planted the seed.  Stillhouse Wine Room is now a fully operating venue on the south side of Killeen on the corner of Florence Road and E. Stan Schlueter Loop.

“My vision: a nice place to relax, select from a variety of great wine and beer, meet people, and great music on weekends.  I don’t want this to be a place just for wine connoisseurs.” said Stuart. “Yes, we have great wines, but that’s not only what this place is about. Our motto is “It’s not just about the wine, it’s about the Room!”

“It was risky to open a new bar in an area that already has so many bars. I put a lot of time, thought and money into designing and building a place like no other. I named it Stillhouse Wine Room, instead of Bar, because it is not your typical bar. Stillhouse Wine Room has a very artistic and calming atmosphere, and probably the only bar around with no T.V.’s. The result is people are meeting and forging new relationships. People are actually talking to each other instead of watching baseball or NASCAR.”

Stillhouse Wine Room has about sixty wines and twenty-five beers available, no liquor is offered as in true wine bar style. The kitchen serves up food that pairs well wine and beer such as fine cheeses from around the world, meat, hummus, olives and desserts.

“This is a very nice place, relaxing for adults, very good staff.” said Rufus Walker, Killeen resident. “You can come in here and be entertained, but still hold a conversation also. A nice mature crowd, it feels just like you are at a friend’s house having a great time.”

One great aspect of Stillhouse Wine Room is the live music, which can be enjoyed on Friday and Saturday evenings. Music is focused on jazz and blues, along with acoustical rock, pop and oldies acts as well.

Stuart said. “Musicians love to play here because it’s a close and intimate atmosphere. We have musicians booked several months in advance. The schedule is on the calendar of our website so people can see far in advance what musicians are performing.”

“Thursday nights is our “Trivia Night”, which is turning out to be quite the party.” said Stuart. “We award wine and desserts to trivia winners during each round. Trivia questions are from a variety of categories so no one gets an advantage. We also provide hors d’oeuvres for patrons to enjoy while playing trivia.”

Salsa Dancing and free salsa dancing lessons is held here late every Wednesday night. Great for experienced dancers, and the instructor is available for those who want to learn Salsa.

“What could be better than a glass of red wine and a cheese plate served to the backdrop of a social crowd, music and a great staff.” said customer, Allen Patterson, Temple resident.
“Stillhouse Wine Room, why did I call it that? I live near Stillhouse Hollow Lake, and when I began brainstorming what to call this place I wrote Stillhouse down. I liked it.” said Stuart. “When you break down the word Stillhouse you get the first word ‘still’. While wine is not made from a still, the connotation of fermenting is there. And the second word ‘house’, a place that is relaxing where friends and family meet.”

“We love the cross section of people we have here; young, old, single, married, straight, gay, white, black, blue, green, and everybody gets along. Many women come here by themselves, with a friend or a group because they feel safe and comfortable.” said Stuart.

On any given night at Stillhouse Wine Room, patrons can be seen ordering wine flights and trying wines that are new to them or old favorites. Customers can be observed striking up conversations and sharing a plate of cheese.

Even with an increasing flow of business Stuart is still finding ways to make Stillhouse Wine Room better. Future plans for the wine bar include ‘Happy Hour’, Tuesday through Friday from 4:30 p.m. to 6 p.m. with food and drink specials. Also, they will be expanding the menu, and there are even plans to put in an outdoor wine patio.

They open at 4 p.m. Tuesday through Saturday, and close at 10 p.m. on Tuesday, midnight on Salsa Wednesday, 11 p.m. on Thursday Trivia, and 1 a.m. on Friday and Saturday nights.
