New season of Patio Café dinners opens at CTC

The Central Texas College (CTC) Culinary Arts program will open a new season of Patio Café Cuisine Nights dinners this Friday, September 29 with a Cajun/Creole cuisine. Dinner, which will be prepared by students in the American Region cooking class, will be served from 6 – 7:30 p.m. in the culinary arts area of the Student Center (Bldg. 106).

The menu opens with an appetizer of crab croquets ($7.50): fried crab croquet nestled on a bed of Cajun-seasoned fried pickles served with a remoulade dipping sauce. The featured soup is Louisiana gumbo ($6.99 for a bowl or $3.99 for a cup with an entrée): shrimp, crab, chicken, okra, onions, bell peppers and celery. Diners can then choose wither the house salad ($4 or free with an entrée) or the black bean salad with fried chicken strip ($9): zesty black bean salad accompanied by sweet and hot peppers on a bed of red leaf lettuce and garnished with a Cajun-fried chicken breast strip.

The evening’s entrees are Cajun-fried chicken ($14.75): hand-crafted six-ounce chicken breast battered and deep-fried to perfection; Cajun garlic pork roast ($12.75): a marinade, slow-baked Cajun pork loin rested and carved to order; and crawfish and shrimp etouffee ($15): a slowly simmered, succulent, fresh water crustaceans combination over rice.

Each entrée except the crawfish and shrimp etouffee (one side dish) is served with a choice of two side dishes. Choose either the red beans and rice: Cajun-style steamed white rice infused with red beans and andouille sausage; Cajun sweet potatoes: hand-selected sweet potatoes with a brown sugar glaze; maque choux: fresh creamy corn with a hint of bacon in a sweet bell pepper medley; and Cajun cabbage with carrots: a shredded cabbage and Julian carrots marriage steamed and seasoned with Cajun spices. Each side dish is also available a la carte for $2.50.

For dessert, choose the Louisiana pecan praline cake ($5): a decadent slice of cake bursting with roasted pecans and drizzled with warm praline sauce; or the croissant bread pudding ($5): a delicious banana bread pudding served with a warm bourbon sauce.
